What is your favorite fall soup? It’s time for cozy soup and salad dinners – souper suppers! I posted some summer salad recipes last summer so now it is time for some fall soup recipes. I usually make potato soup, tortilla soup, and pumpkin black bean soup in the fall. Having a family member who is gluten free and dairy free has challenged me to rework a few favorites for when they visit. Surprisingly the potato soup turned out much better than I expected. Here are two of my favorite soup recipes with gluten free, dairy free suggestions plus a free Thanksgiving printable! Pumpkin Black Bean Soup 3 – 15-19 ounce cans rinsed and drained black beans 1 – 14 1/2 ounce can drained chopped tomatoes 1 tablespoon butter (or oil of your choice) 2 medium chopped onions 3 cloves minced garlic 1/8 teaspoon salt 1 teaspoon freshly ground black pepper 4 teaspoons cumin (more or less to taste) 4 cups chicken broth 1 – 28 ounce can pumpkin (plain, not pumpkin pie mix!) Product Review: Bankroll Coffee
Can drinking coffee make you a millionaire? I self identify as a coffee snob. No doubt about that. For Christmas my kids got me a coffee bundle from Bankroll Coffee, and it was the perfect gift! Good coffee, catchy packaging, and amazing prices per cup. Names like Double Down, Morning Drip, and Diamond Hands grace the bags. I can’t even pick a favorite, but maybe Hodl, the espresso roast. Eventually, I’d like to try the decaf, Buy the Drip. If you read my earlier post, you’ll know that I make cold brew coffee at home. I always have some regular and some decaf in my fridge. Summer Salads
What’s your favorite summer salad? BLT’s are always a favorite summer meal when the garden tomatoes are sun-ripened to perfection, but wait until you try easy BLT summer salads! Bacon, Lettuce and Tomato Salad takes dinner to a whole new level of healthy summer goodness. Chop up some fresh lettuce and summer tomatoes. Add some perfectly cooked bacon (whatever your definition of perfect is) and top with homemade ranch dressing made with plain Greek yogurt and spices. If you need a side, Texas toast or potato chips are a good addition. I have a recipe for ranch seasoning that you just stir into plain yogurt or sour cream for a quick dressing or dip. This is literally one of those quick meals that comes together with the items you have on hand! Charcuterie Board Tips
What’s your top choice for meat and cheese on a charcuterie board? My answer to the question about what is the best meat and cheese for a charcuterie board is whatever’s currently in the fridge or on sale at the grocery store. This is probably why I’m not an influencer. While Instagram influencers have much to teach me about food and fashion, I do not have much time to watch endless reels to get to the actual tips. Raleigh Cheesy is my favorite Instagram account to skim through for cheese inspiration and small business start up tips that do not involve cutting corners when it comes to ethics. I took a charcuterie class with Courtney from Raleigh Cheesy in early 2020 and learned SO much. But how I use what I learned is a bit different. It’s like wandering around Pottery Barn for inspiration and awe then shopping for one or two affordable items at Target or even a thrift shop to add to what you already own. End of School Traditions
What is your end of school tradition? If asked what our end of school traditions were, those who knew my children growing up could easily answer that question. It’s ice cream! Our family has ice cream for dinner on the first and last days of school every year. It was fitting that our oldest served ice cream sundaes at her graduation party. Two intentional ideas were wrapped up in our end of school traditions. We were building family memories, and we were having intentional table talks. “How was school today?” will get you the typical “fine” answer, but put ice cream in a kid’s hand and ask “what was your favorite project this school year” and you’ll likely get an answer that’s more than a word long. And you’ll likely get questions from other parents about why you are giving your kids ice cream for dinner. Since we were not a family who ate dessert after dinner on a regular basis, this is the stuff memories are made of. And who wants to feel overstuffed after a meal. Not me. Cold Brew Coffee Review
Did you know that cold brew coffee has been around for many, many years, and it’s not just a current craze? My parents and grandparents made cold brew coffee all of my life. Our fridge always housed bottles of liquid gold, cold brewed coffee concentrate. We never had to worry about shelf life because we went through it quickly. Hot black coffee was the natural way to start and end the day and to offer to guests. Once some friends even let themselves in our house just before we returned home from a trip and hid my mom’s cold brew and ate up the ice cream in the freezer. The ice cream was forgivable, but we couldn’t imagine a more horrible prank than to hide the coffee! While I had to use mini 4 cup coffee pots thru college, I soon got my own Toddy Cold Brew system. Cold brew regular and decaf liquid concentrate are always in my fridge. While we dabble with French press and pour overs at our house, we always have cold brew on hand for hot or iced coffee. Weekly Meal Planning
Is weekly meal planning too complicated or the lazy way out? Recently, a friend told me that she was too lazy to do weekly meal planning. I told her that I did weekly meal planning WHEN I was too busy or too lazy to think up new foods. For me, it’s a quick way to get 5-6 meals planned out with recipes and a grocery list. I have a few favorite go-to sites that I use and even one that’s vegetarian. On the weekend, I print out a weekly meal plan that includes recipe links and a grocery list (such as this one here). I open my calendar and match up meals to our schedule for the week, crossing out or replacing any that don’t fit our week or our taste buds. I then modify the grocery list to eliminate any items for recipes I’m not using. Lastly, I cross-check the grocery list with my fridge and pantry marking off any items I already have on hand. All that should take less than 15 minutes depending on how many rabbit trails I took when skimming the recipe links or reorganizing my pantry. My kitchen wall holds a menu board that…
